Fiesta Avocado Salad, page 46

2 large avocados, chopped in large chunks
1 stalk celery, chopped
1/3 cup red bell pepper, chopped
1/4 cup green olives, sliced
1 fresh jalapeno, chopped
1/4 cup fresh cilantro, shopped
juice of 2-3 fresh limes

Mix all ingredients together. Serve on lettuce leaves with a main course.

This salad is a beautiful addition to chalupas or fajitas! For a stronger flavor, add onions.

Yield: 4 servings
